So the miui website includes both beta and stable as recovery mode downloads, but the mi forum gives link for(idk beta or global) fastboot only download.. I prefer Recovery mode and I'm confused why the websites show different results? Which one should I download?

No. You Got to install 8.10.25 Beta build First.

Once you do that You can Install 8.11.15 or 8.11.29 Build

Remember!!  When you Switch From Stable to Beta all your data / Internal storage gets Deleted

Also After you Switch to Android 9 you can't roll back to android 8

each one of those downloads you linked can be installed through recovery mode right? Also should i unlock bootloader in order to do it in recovery mode, or is it unnecessary? This is my first time, so i'm trying to be thorough.. Thank you!
Edit: I'm surprised none of the forums mentioned what you just did, that i have to install 8.10.25 and then 8.11.29. Do you have a link for detailed guide? Either way, it's okay if you dont know one. Thank you again!

Thank you! I'll be updating in 30 minutes. Is there something i should do before updating, other than backing up? Last time I updated to Beta ROM 8.11.29, my ROM got buggy and it kept asking for a pin that i haven't ever entered in the phone and i had to get it fixed for $20. So rn i haven't entered any pin so hopefully i'll be ok. Do you think i should wipe the device before updating to prevent any problems?

Well make sure you know what Mi account you have logged into. If you do not log out from Mi account  after update it might ask for password  of your Mi account. Always keep your account password with you because sometimes they ask mi account password after rollback
